Recipe: Scrambled Eggs Nest

This long weekend, I decided to "celebrate" Easter through food. After looking up a couple Easter themed recipes, I came across this recipe from the Disney FamilyFun website. 



Preparation time: 10 minutes 
Total time: 35 minutes 

Ingredients: 
1 bag of curly fries (substituted for shredded potatoes) 
1/4 cup vegetable oil or unsalted butter 
1/4 teaspoon salt 
1/4 teaspoon pepper 
6 eggs
2/3 cup milk 
1/2 cup finely diced onions
1/2 cup finely diced red bell peppers
3/4 cup diced cooked breakfast sausage 
1/3 cup shredded cheddar cheese 





I had an incredibly hard time finding shredded potatoes at various supermarkets (hard to believe, I know), so I had to take a creative approach and used curly fries as an alternative. Instead of pressing down the shredded potatoes, I lined the curly fries to form a cup (as pictured above). I thought the turn out was pretty good, not too shabby at all!

Also, I bought maple breakfast sausages and it definitely added a good twist to the flavour!

Instructions:
  1. Preheat oven to 425 degrees F and lightly grease the muffin pan. 
  2. Line the curly fries along each cup to form mini cups. Place into heated oven and bake for 20 minutes.
  3. Meanwhile, whisk together the eggs and milk.
  4. Heat a large nonstick saute pan over medium-high heat. Add the oil/butter to the pan and heat.
  5. Add in the diced onions and peppers to the pan and saute until both are soft. 
  6. Then add the diced sausage and cook until heated through. 
  7. Add the egg mixture last and stir until the eggs are set and small curds are formed. Season with salt and peper. 
  8. Remove the potato nests from the muffin tin and place them on a plate or cookie sheet. 
  9. Fill up each nest with some egg mixture. 
  10. If you like cheese, sprinkle shredded cheese on top and place the nests back into the oven until cheese is melted. 


I am a huge fan of brunch and love every bit of the recipe! For me, you can never go wrong with eggs, potatoes, and cheese! This does take a bit longer to make compared to normal homemade brunch, but it is an eggcelent recipe to play with for a fun sunday morning. I definitely had a great time making this and felt super creative lining up the curly fries! :)

  1. shredded potatoes don't exist in prepackaged conditions, not in canada anyway. it's not hard to shred potatoes yourself - fresh potatoes are so much better.
